The weekend started with a trip to the farmers market...and ended with lots of yum.
* - Canned 4 quarts and 1 pint of green bean/wax bean/sweet onion pickle mix
* - Canned 4 quarts, 1 pint, 1/2 pint mixed vegetable pickle mix (cauliflower, banana pepper, pearl onion, green bean, garlic, jalapeños)
No pickles this year because local crops got decimated with Ike.
Dinner was a rice mix of rice, black beans, corn, stewed tomatoes, chopped jalapeños, onion, cilantro, cheese, a can of cream soup, and shredded chicken. On top of that were 3 fillets of roasted Poblano peppers (roasted in my wood burning stove) and covered with corn bread and baked. Enough for 3 dinners and a lunch!
