Lamb & Pasta Salad

I'm using LJ to remember how I made dinner last night, because it was phenomenal.

Lamb & Marinade
1 lb boneless leg of lamb cut in large chunks
1/2 cup white wine
1/4 cup olive oil
1/8 cup balsamic vinegar
1 Tablespoon teriyaki sauce
1 teaspoon Worcestershire
1 teaspoon garlic powder
1 teaspoon thyme
1 Tablespoon lime juice (because I didn't have lemon)
1/2 teaspoon salt and pepper
1/4 teaspoon cayenne

combine and marinate for 3 hours (minimum)

Pomegranate Vinaigrette
1/3 cup extra virgin olive oil
2 Tablespoon pomegranate syrup
2 Tablespoons balsamic vinegar
1/4 cup pomegranate juice
1/2 teaspoon thyme
Sprinkle of garlic powder, cayenne, salt & pepper

Whisk vigorously and let the flavors meld for 2 hours (minimum)

Grilling
1 large sweet potato, cut into 1" slices and tossed in olive oil and coarse salt.

I grilled the lamb until medium rare, and the sweet potato slices until softened and golden.

For the salad, I slices the lamb into bite sized pieces and cut the sweet potato into chunks

Salad
The salads were made individually as follows:

layer of baby spinach leaves
1 cup cooked spiral pasta
goat cheese crumbles
toasted pine nuts

The hot grilled items went on top and the entire thing got drizzled with the Pomegranate vinaigrette.

The mix of flavors was so delicious. I need to remember to make this again soon, and often!

Sounds yummy and you used pomegranate. I'm convinced almost everything is better with pomegranate....;)
